Roasted Garlic Parmesan Carrots

I have to admit, I really dislike carrots. However, when my daughter, Chelsea, brought a side

dish of carrots to a family gathering during the holidays, I quickly had a change of heart.

This side dish is now a favorite of mine!

How can you go wrong with anything tossed in garlic, butter, and Parmesan cheese! Haha.

This is a great vegetable side that not only can be served with the traditional holiday hams and turkeys, but it could be served with chicken or pork. The butter and salt intensify the natural sweetness of the carrots, and they come out so tender and delicious!

The flavor of these carrots is unbelievable, and it is a great way to get your family to eat carrots if they were like me and didn’t like them before. In addition, there really isn’t much prep time to prepare this flavorful side dish.

Give them a try, and I promise you will be making them again.


Roasted Garlic Parmesan Carrots


2 lbs. carrots, washed, and cut into 3” inch pieces

4 tbsp. butter

4 cloves garlic, minced

1 tsp. Italian Seasoning

¼ tsp. salt

¼ tsp. pepper

1/3 cup grated Parmesan cheese

¼ cup chopped fresh parsley


  1. Preheat oven to 425F. Grease a rimmed baking sheet with cooking spray, or line it with foil.

  2. Melt the butter and add garlic, Italian seasoning, salt, and pepper and whisk thoroughly.

  3. Pour the butter mixture over the carrots and toss to coat. Add grated Parmesan cheese and mix to combine.

  4. Transfer carrots to baking dish. Bake for 20-25 minutes, or until tender.

  5. Mix around halfway through cooking.

  6. Remove from oven and garnish with fresh parsley.


- When cutting the carrots, cut into thirds first, then cut each piece horizontally into halves so

they will cook quicker

- For optimum taste, freshly grate the Parmesan cheese
